Ingredients
4 oz self raising flour
4 oz caster sugar
4 oz stork margarine
1 teaspoon of baking powder
1 tablespoon of milk
2 medium eggs
1 teaspoon of vanilla extract
This will make approx 12 cupcakes
Topping
Strawberries
Dairy Cream
Preheat the oven gas mark 5
Put all the ingredients into a mixing bowl, mix with a spoon or electric whisk.
Place the cupcake cases into the muffin tray
Using a tablespoon half fill the cupcake cases with the cake mix.
Bake for approx 20/25 minutes until golden brown
when cooked place on a wire rack to cool down
Decoration, Cut out a small circle of sponge from each cake so you end up with a small well in the centre, fill with the chopped strawberries, then top with cream, i used real whipped cream which you squirt out of the can..top with a strawberry half, then add the cut out round of sponge, and serve straight away, little tip decorate the cakes as you need them as the cream can go flat.
