Marshmallow Topped Cupcakes

Vanilla Cupcakes topped with Chocolate Buttercream & Marshmallows
4 oz self raising flour
1 teaspoon of baking powder
4 oz stork margarine
4oz cater sugar
1 tablespoon of milk
2 medium eggs
1 teaspoon of vanilla extract /or if you want a chocolate cake add 1 tablespoon of cocoa powder instead.
This will make approx 12 cupcakes
Preheat the oven gas mark 5
Put all the ingredients into a mixing bowl, mix with a spoon or electric whisk.
Place all the cupcake cases into the muffin tray
Using a tablespoon half fill the cupcake cases with the cake mix.
Bake for approx 20/25 minutes until golden brown
when cooked place on a wire rack to cool down
For the topping you will need
3 and a half oz of unsalted butter
7oz icing sugar
1 tablespoon of cocoa powder
1 tablespoon of milk
Mini Marshmallows
with you hands rub the butter into the icing sugar and the coca powder, when the mixture comes together add the milk and mix with a spoon.
If you have an icing bag you can pipe the buttercream onto the cakes or spread nicely with a palette knife, then top with the mini marshmallows.
