Ingredients
125g/4oz butter
55g/2oz caster sugar
180g/6oz plain flour
1, Heat the oven to gas mark 5/190C
2, Beat the butter and sugar together until smooth. use your hands if you wish
3, Mix in the flour should come together like a dough, Turn onto a work surface and gently roll out until its about 1cm/half an inch thick.
4, Cut into fingers of use a cookie cutter, place onto a baking tray, sprinkle with icing sugar if you want them left plain, Chill in the fridge for about 20 minutes.
5, Bake in the oven for 15-20 minutes, or until a pale golden brown, when cooked place on a wire rack to cool.
6, To decorate use ready roll icing, you can buy these in various colours, roll out thinly, then using the same cookie cutter cut out the shapes, to stick the ready rolled icing to your biscuit use some runny icing sugar.
I managed to make 14 festive biscuits from this mix, if you choose to cut into fingers you can make approx. 20 biscuits.
